Ladies and gentlemen:
Today I will give you a brief introduction to Chinese cuisine.And let us start our journey in China with the Chinese cuisine.
Chinese cuisine has a close relationship with 5000 years of Chinese traditional civilization. In ancient China our ancestors got inspirations from the Chinese yin yang and the five elements- Gold, Wood,Water,Fire, and Earth. They are believed to be the basic elements of the whole world. Dishes are more and more related to the local spots, such as the Yellow River Carp.
Chinese cuisine is particular about six traits – color, fragrance,taste, appearance, sound, and utensils. As expected, color, fragrance, taste, and appearance are easy to understand. Sound means if you munch on some kinds of Chinese cooked food, you can hear the clear sound. Utensils means what plates to load the dish is particular in Chinese; such as man-han feast “A Full Formal Banquet”. There are 108 cuisines total in the banquet. There must be a Yellow plate because in the ancient time, Man-han Feast, is a royal dish while yellow is the royal color.
Actually, there are 6 kinda cuisines in China. They are:
1) Local Cuisine
This cuisine system is created or formed within a certain area and in the matter of climate, customs and so on. Such as Eight-Favor-Cuisine-System (Shangdong-Favor,Sichuan-Favor,Guangdong-Favor,Fujian-Favor,Jiangsu-Favor,Zhejiang-Favor,Hunan-Favor and Anhui-Favor).
2)Imperial Cuisine
Imperial cuisine was cooked for the emperors and the royal families. The Chinese names of the imperial cuisine are of great significance. They are fastidious about color, smell, taste and appearance. Examples are the “Flying Dragon Trifling with Phoenix” made with chicken,shrimp, and squid with mixed vegetables, and “Birds Worshiping the Pheonix” made with chicken and pork, mixed with flour.
3)Governmental Cuisine
Governmental cruisine means the cuisines for the civial and military officals in anciant times that were then spread to the whole world throughout time. Kung Pao Chicken, Dongpo Pork, and Confucius-saluting (a series of cuisines like Man-han Feast) are examples.
4)Racial Cuisine
This cuisine system was developed with local races then spread to the whole nation, such as instant-boiled mutton.
5)Temple Cuisine
Most of these cuisines are form the buddhist temple. There isn’t meat in these cuisines and they are very good for our health.
6)Medical Cuisine
This cuisine system can be called medical-cure-cuisine.Chinese medicine cures people by thefunctions of salty, sweet, bitter, hot, and sour. In these cuisines, people put some Chinese Medicine in the dish so that it can do good to their health.
There is an old saying- Every old country with long history must be good at food.When eating French food it may satisfy your sense of taste,when eating Greek food it may satisfy your sense of smell,when eating Japanese food it may satisfy your sense of sight, but when eating Chinese food it may satisfy every sense of you.
According to statistic figures, there are around 5500 favorite dishes in China. In order to have a taste of each dish, my friends, would you tell me how long you will stay in China?
